I'm an American transplanted into the rural Philippines. I went from Seattle, Washington to Tacloban, Leyte, Philippines. With the help of an air conditioner or two, I'm starting a new life here in my 40's.
One of the big challenges is adapting what I cook. And, with more difficulty, where I get my ingredients.
Being from Seattle, I'm used to a wide array of cuisines and good restaurants to go with them. Here in Tacloban, things are a little different.
I want to make and learn to make well the foods that I enjoyed back in the States.
The problem? Limited ingredient availability. So, I start a new adventure, learning to make many things from scratch and growing many of my own herbs.
